The activity tab of each project should display a list of users who are watching the project.
I considered whether this could raise privacy concerns, but I don't think it really does. Youtube has a similar feature with its list of subscribers for any given channel. In that case, although users can hide the list of channels that they subscribe to from their own member page, they can't hide their own name from the list of subscribers on channels that they subscribe to.
